Xabier Goikoetxea, Executive Chef of the one-Michelin-starred Oria restaurant at the Monument Hotel in Barcelona, will be Sabayon’s first Michelin-starred guest chef of 2025.
This visionary chef has made a name for himself in the world of gastronomy for the way he effortlessly marries tradition with innovative flair, crafting menus that highlight both the cherished flavours of his Basque roots and the vibrant offerings from the local landscape.
A protégé of legendary Chef Martín Berasategui, Goikoetxea continues his mentor’s preservation of regional Spanish culinary traditions while adding his modern sensibilities and an eye for beauty.
